Roasted Butternut Squash with Rice
Step 1: Preheat oven 200°c/ 400°f/ gas mark 6.
Step 2: Prepare the squash. Cut the butternut squash in half lengthways.
Step 3: Season the squash. Place the squash in a baking tray and brush both halves with olive oil.
Step 4: Prepare the rice. Add the rice and cook for a further minute while stirring continually.
Step 5: Make the filling.
Step 6: Stuff the squash. Hollow out a little of the squash, add it to the rice, and mix it in.
